1 c. hot water
1 small package of black cherry or raspberry jello
1/2 c. sugar
1 16 oz. bag of fresh cranberries, washed and sorted
1 medium seedless orange, sliced (but not peeled)
1/2 c. chopped pecans
1 8 oz. can crushed pineapple
In a medium bowl, combine the hot water, small package of jello and sugar, and stir until dissolved. (Do not add another cup of cold water as directed on the jello package.) Set aside to cool.
In a food processor, grind cranberries and orange slices into small pieces. Add chopped pecans and grind a few pulses more. In a large glass bowl, combine the cranberry mixture with the crushed pineapple and jello mixture. Cover and refrigerate overnight. Serve cold.
