
Chocolatey, chewy and classic! ♥
1/2 c. unsweetened cocoa powder
1 c. sugar
1/4 c. vegetable oil
2 eggs
1 t. vanilla extract
1/2 c. brown rice flour
1/2 c. sorghum flour
1/4 cup low fat coconut flour
1 t. baking powder
1/4 t. salt
1/4 t. xanthan gum
1/2 c. confectioners sugar
In a large bowl, mix together cocoa, sugar and oil. Beat in eggs and vanilla extract. In a separate bowl, combine brown rice flour, sorghum flour, low fat coconut flour, baking powder, salt and xanthan gum. Add to cocoa mixture and mix until thoroughly combined and soft dough forms. Cover and chill for at least 4 hours.
Preheat oven to 350 degrees. Grease 2 cookie sheets, or line them with parchment paper. Add confectioners sugar to a small bowl. Shape chilled cookie dough into 1 inch balls, roll in confectioners sugar, then arrange on prepared cookie sheets, spacing about 2 inches apart. Bake for 10-12 minutes. Cool. Makes about 3 dozen.
