1/2 cup gluten free panko breadcrumbs
1/2 cup freshly grated parmesan cheese
1/2 t. salt
1/2 t. onion powder
1/2 t. rubbed sage
1/2 t. dried thyme
1/4 t. ground black pepper
1/8 t. garlic powder
1 egg
1 T. water
1/3 cup garbanzo bean flour (also chickpea flour or besan)
4-5 pork chops
4 T. vegetable oil
Combine bread crumbs, parmesan cheese and spices in a shallow bowl. Whisk egg and water in another shallow bowl. Put garbanzo bean flour in another shallow bowl. Heat oil in a large skillet over medium to medium-high heat. Coat both sides of pork chops with garbanzo bean flour. Dip each pork chop in the egg mixture, then press into the bread crumb mixture, coating both sides. Brown each pork chop in skillet for 2-3 minutes per side, until golden brown. Place pork chops on a baking sheet and bake in a 350 degree oven for 15 minutes or until done. Serve immediately.
