Gluten free brown rice crispy cereal, peanut butter and powdered sugar are combined to create a treat your family will love! Also a great recipe for little chef helpers! ♥
1 1/4 cups creamy peanut butter
4 T. soft butter (1/2 stick)
2 measuring cups of 10x powdered sugar (8 oz. net weight or a half a box)
3 cups gluten free brown rice crispy cereal
3/4 cup of semi sweet chocolate chips
3 T. Crisco shortening
With a hand mixer or stand mixer, cream peanut butter and butter. Mix in sugar on low at first, 1 cup at a time, until dough forms into large soft clumps. Mix in rice crispies at low speed just until evenly incorporated. Pinch teaspoons of dough in 1″ balls and place on wax paper or parchment paper.
Heat chocolate chips and Crisco in a microwave safe bowl for 1 minute or so, stirring every 15 seconds, until mixture is smooth. Spoon generously over peanut butter balls. Refrigerate until firm. Can also freeze. Makes about 70 balls.
